Julie,
I think I know what your problem is. You did not use coconut oil, you used coconut oil *soap*! This is white melt & pour soap base. You melt it in the microwave or double boiler, add fragrance and/or color and any other additives you want in your soap (not too much!), pour it into the molds and you have soap. It melted readily in the micro, but then it began to set up again as soon as it cooled.
What you were trying to make is Cold Process soap and you start with the basic oils, no soap base involved.
So try again, but get yourself some real coconut oil.
BTW, that recipe is awfully heavy on the coconut oil. It is bound to be a drying soap. There are better recipes, just as simple, out there.
